Michael, better known as “Ruby,” is a born and raised native Las Vegan. He started his career at age 19, working the breakfast buffet shift at Buffalo Bills Casino. Michael attended culinary school at the College of Southern Nevada, spent time in several restaurants, and opened a sandwich shop before joining Momofuku Las Vegas as a Sous Chef in 2017. Michael is currently the Executive Chef of Momofuku Las Vegas.
Victor was born and raised in Phoenix, Arizona. He has been in the hospitality industry for 15 years. He’s worked for Lawry’s, Bastianich Hospitality Group, and Wolfgang Puck, and joined the Momofuku team in 2017 as Assistant General Manager of Momofuku Las Vegas. Before devoting himself full-time to the hospitality industry, he spent time in Los Angeles drawing storyboards. When not working, he spends his time with his wife, Trish, and their two cats.
